What is your favorite crock pot/ slow cooker recipe?
I got a slow cooker for christmas. I've got some recipes, but am looking for more options!
Here are a couple of my favorites:
Curry Chicken:
1 pkg. boneless, skinless chicken
1 can cream of chicken soup (use 2 if you like more gravy)
1/4 cup cooking sherry
2 tablespoons of butter
2 green onions with tops, finely chopped
1 teaspoon of curry powder (or to your taste)
1 teaspoon of salt (or to your taste)
dash of pepper
Spray interior of crockpot with non-stick spray. Cut chicken into small bite-size pieces; place in crockpot. Add all remaining ingredients. Cook and cover on high setting 2-1/2 to 4 hours. Serve over hot rice or pasta. Makes about 4 servings.
For variation, sometimes I add in about 3 Yukon potatoes cut into chunks to cook with the chicken. The other alternative I do is stir in some cooked bowtie pasta after the curry chicken is done (this is one of those times when I use that extra can of cream of chicken soup in the curry chicken.)
Enchilada Casserole:
1 small can (15 oz) enchilada sauce (mild or hotter if you like)
1 can Nalley's Thick Chili Con Carne with Beans (or the one with Walla Walla onions in it if you like onions)
1 to 1-1/2 lbs. of extra lean hamburger
1 can diced tomatoes with diced green chilies
shredded cheese (cheddar, monterrey, jack cheese)
sour cream
flour tortillas
sliced olives
In a sauce pan, cook the hamburger and drain any excess grease. Mix in the can of chili and heat; add the tomatoes and green chilies; stir and heat through. Spray the interior of your crockpot with non-stick spray (be sure to include the sides). Pour some enchilada sauce on bottom of the crock pot. Tear up a couple of tortillas and layer them in. Spoon in some meat/tomato mixture, spread on some shredded cheese. Top with a couple more torn up tortillas, enchilada sauce, meat mixture, shredded cheese. Cook on low 2 to 3-1/2 hrs. Serve with sour cream, olives. I also like to have tortilla chips with this or some cornbread.

Basically, if you use an electric cooker, you will use fewer units of energy. That is the bottom line when it comes to comparing gas and electric. However, proponents of gas say that, because electricity costs more per unit than gas does, this could well be a false economy.
Gas cookers are preferable for some people because of the instant heat that they offer. If you want to cook something quick, there is an element of time efficiency to be had with gas. All you have to do is fire up the gas, stick your pot on the hob and away you go.
Gas is actually cheaper than electricity too, so not only are you getting n faster cooking; you are experiencing more cost-effective meal preparation.
As regards the oven, one negative aspect about gas cooking is that you will have an uneven oven temperature. There is no fan in a gas oven, so heat does not spread as evenly as it should. This means that gas ovens are hotter at the top than they are at the bottom.
You also need to have the things professionally installed. This is a safety matter, and you will have to look around for an engineer who has the quality mark for installation before you can have the cooker in your home.
AS regards electric cooking, the first real difference is the fact that you have an even spread of temperature throughout the oven. Most ovens have fans that spread the heat all the way round the spaces too.
They are easier to clean, with ceramic hobs that are much easier to get sparkling than the hob on a gas cooker, which involves gaps and risers.
The best thing you can do is look at how much energy and money you want to spend. However, there is some flexibility. There are combination gas and electricity ovens, for example, that offer the best of both worlds.
